Shrimp Scampi with Linguine

If there’s one very simple and super delicious dinner I had to name, it would be shrimp scampi with linguine! Make sure you have all the ingredients chopped, rinsed and ready, as this dish is done super fast - around 20 minutes - and needs to be served straight away.

Shrimp Scampi with Linguine

Ingredients:


  • 1 pack linguine

  • 1 1/2 pound shrimp, peeled and deveined (thawed if frozen)

  • 5 garlic cloves, minced

  • 3 tbsp olive oil

  • 1 tsp chili pepper flakes

  • 1 cup dry white wine

  • 4 tbsp unsalted butter

  • 1/2 lemon juice and zest; slice the other half to serve

  • 1/2 cup finely chopped parsley


Step 1 - Cooking the pasta


Star boiling linguini in a large pot of salted boiling water. Check the packaging for al dente timing; should be around 10-11 minutes. Drain the pasta and set aside. Keep one cup pasta water just in case for the sauce.


Step 2 - Cooking shrimp


Heat up a large pan. Simmer halt the amount of chopped garlic in olive oil, add shrimp and cook until just turning pink, 3-4 minutes. Don’t overcook as it will become rubbery. Take out the shrimp from the pan and set aside.


Step 3 - Sauce


Add butter to the pan, the rest of the garlic and chili peppers. Simmer for a minute and add white wine, lemon juice, zest and salt. Bring to a boil and let it cook for a few minutes to thicken a bit.


Step 4 - Combine


Return the shrimp to the pan along with linguine. Add parsley and combine well. If you want more sauce add the pasta water that was set aside earlier.


Top with optional freshly grated Parmesan cheese.
