This is a traditional Georgian plant-based dish, that is rich in iron and good fats, among other vitamins and goodness. It’s great as a dinner appetizer or for lunch. I love to eat the leftovers in in the morning too.
Ingredients: 1 bag of frozen chopped spinach (fresh is of course better, but you will need a LOT of fresh spinach) 1 cup walnut halves 1 garlic clove 1/4 of a medium red onion Small bunch of finely chopped cilantro Pomegranate seeds Combination of following dry spices to taste: fenugreek, chili pepper, marygold, coriander, salt
Boil spinach in hot water until tender. Drain well in colander and let it cool, then squeeze out the water. Place walnuts, onion, garlic, and spices in a blender, add about ¼ cup of boiling water and blend well until smooth. In a bowl place together spinach, walnut paste from the blender, cilantro and mix well. Shape into small balls and decorate with pomegranate.
