This is my favorite simple apple pie recipe that I got from my mom. It is really easy to make and always turns out delicious. Prep only takes 15 minutes, and it bakes in about 45 minutes. A pro tip from my food tasters (aka my kids): it's great with vanilla ice cream. A step-by-step video guide is at the bottom of the post, as always.

Ingredients:
5 apples
2 sticks of butter (200 gr)
3/4 cup of brown sugar, plus 2 tbsp for apples
3 eggs (2 for batter, 1 to glaze)
1 tsp baking soda
1 tsp vanilla extract
2 to 2.5 cups flour
Step 1: Peel the apples and grate them. Add 2 tbsp sugar and mix.
Step 2: Melt the butter in a small pot. Whisk eggs and sugar togther, then pour in the melted butter. Add vanilla extract and baking soda. Start folding in the flour until the dough is not sticky.
Step 3: Grease the 9" round baking pan with butter. Split the dough into two unequal parts. Place the larger one at the bottom of the pan and spread it out gently. Add the grated apples. On parchment paper, roll our the smaller part of the dough into a round shape to the size of the pan, and gently flip it over the baking pan. Pinch the edges together.
Step 4: Whisk the egg yolk in a small bowl and brush it over the top of the pie.
Step 5: Bake at 300F for 45 minutes.
