Fried Halloumi and Tomato Toast

This toast is great for breakfast or for lunch, really simple to put together, yet absolutely delicious. 1 halloumi cheese makes 3-4 toasts.

Ingredients:

  1. Toast bread (I love high fiber loaf from Cobs Bread)

  2. 1 Halloumi cheese

  3. 5-6 Cherry tomatoes

  4. 1 small cucumber

  5. Handful of microgreens

  6. Sea salt

  7. balsamic glaze

  8. Optional add ons: avocado, pickled onions, kalamata olives, arugula.


Step 1 - cut the halloumi cheese and start frying in a pan with a bit of oil. It should be nice and crispy from bith sides. Takes about 6-8 minutes.


Step 2 - grill/fry toast bread in a pan with olive oil until crispy from both sides.


Step 3 - while halloumi and bread are frying, cut all the toppers. Half the cherry tomatoes and thinly slice the cucumber (I use the mandoline slicer to make it super thin). Optional add ons: avocado, pickled onions, kalamata olives, arugula.


Step 4 - put the toast together. First halloumi, then tomatoes, cucumbers, microgrees, coarse sea salt and a drizzle of balsamic. Enjoy!
