Poached eggs can be a delicious addition to morning toast or afternoon salad. There are different methods of making them. With experience it gets much easier to just crack the egg in hot water and produce a perfect poached egg. But to be on the safe side, here is a tried and guaranteed method.
Boil small pot of water, add 1 tea spoon of white vinegar. Place cracked egg in a small cup (I find this easier than cracking the egg straight into boiling water). Create swirling vortex in the water with a spoon and gently place the egg in the middle. Let it boil on medium heat for 3 min. Take the egg out with a spoon and place on the paper towel. remove extra white bits.
My favorite poached egg sandwich is some fresh toasted bread, avocado slices, some olive oil, pine nuts and top it off with the poached egg.
For salads the possibilities are endless. Any combination of these ingredients will be delicious: mixed salad greens, baby spinach, smoked salmon, wild rice, avocado, pine nuts, tomatoes… and poached eggs.
