We’re officially into spooky season. I love seeing all the beautiful front door porch fall decor when walking around and super creative halloween snacks and meals popping up on my instagram feed.
This is my favorite spooky potato salad. It's really delicious and with those spiders on top, goes perfectly well with the Halloween season.
Ingredients (scroll down to see the quick video of how all the layers of the salad come together):
5 medium potatoes
4 medium carrots
6 eggs
1/2 cup chopped dill
1/2 cup chopped scallions
1/2 cucumber
Mayonnaise
3-4 black olives for spiders
Step 1 - Boil whole potatoes (skin on), carrots and eggs, let cool before peeling.
Step2 - Separate egg whites from egg yolk. Whites go in the middle of the salad and yolk goes on top. Keep one carrot sliced in circles to decorate.
Step 3 - Start grating over the serving dish. First potatoes, then carrots, chopped cucumber, mayo, salt, pepper, egg whites, chopped scallions. Top with potatoes to cover everything, sprinkle salt.
Step 4 - Squeeze or spoon more mayo to top off the salad and spread it around with the back of the large serving spoon.
Step 5 - Start decorating: grate the egg yolk all over so that the salad is all yellow. Add chopped dill all around only on the lower part topped with carrot circles. Put a few spoons of mayo in a ziplock bag, cut the corner off and draw a spider web, then place the black olive spiders on the web. The spooky potato salad is ready!
This portion makes 2 medium plates (like the one on the photo) or 1 larger one.
