Garden salads are a perfect addition to any meal. So simple to throw together and always adding a pop of taste and color to the meal and the table. There are many recipes out there, but this is the one I make quite often. I prefer to use kumatoes over tomatoes as they are sweeter, but during summer months I would definitely go with tomatoes from farmers market. Just 3 salad ingredients and a dressing.
Ingredients:
Spring salad mix
4 kumatoes or tomatoes
5 radishes
Dressing:
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp lemon juice
1 tsp dry oregano
1 tsp salt
1/2 tsp black pepper
Method:
Place spring salad mix on a wide salt plate. Slice kumatoes in wedges, radishes in thin circles and spread over the leaves. In a separate small bowl, add all the dressing ingredients. Just before serving, mix the dressing well with the spoon and pour over salad, toss the leaves and enjoy with any meal of your choice.
