Baked pork chops with roasted potatoes is definitely a meal to add to regular family recipes. It needs one cast iron skillet (meaning not much mess in the kitchen) and 30 minutes of your time. If the pork chops are brined a day in advance in the pulled pork spice mix, they turn out much juicer and tender, but for weekly family dinners, I skip that step and go with the simple version of the recipe. For the family of 4, you will need:
Ingredients:
3-4 pork chops, about 1-1.5 pounds
5 medium yellow potatoes
Cooking olive oil
Salt
Optional: cayenne pepper, smoked paprika
Method:
Heat oven to 375F. On the stove top heat the cast iron skillet, add a bit of oil and brown pork chops from both sides well (about 3 min each side). Wash yellow potatoes well and cut into potato wedges. Place potato wedges around pork chops, add a bit more oil and generous amount of salt (plus optional spices) and mix around so they are covered from all sides. Place in the oven and bake for 20 min, then switch oven to “high broil” and broil for another 5-7 minutes until pork chops and potatoes are nice golden brown on top. Remove from the oven, let it rest a few minutes. Take out pork chops on a cutting board and slice them. Put potatoes on a separate plate and enjoy the dinner. A simple garden salad would make this dinner truly complete.
Brown pork chops from both sides for 3 min each
Add potatoes, cover well in oil, salt and optional spices and bake for 20 min, broil for 5-7 min
Let rest once out of the oven, slice pork chops and serve with additional garden salad or green beans
