Ground Beef with Corn and Beans

If like me, you are also in constant search of  simple, under 30 min family meal, then this recipe is for you.  This ground beef dish is a favorite of children and grown ups alike! Total prep time is about 30 min and would go well with rice, fried potatoes or simple green salad. Ingredients (serves 4-6):

🧅1 finely chopped medium red onion 🧅1 pound grass fed ground beef 🧅1 cup frozen corn 🧅2 fresh, peeled and diced tomatoes 🧅1 can of beans 🧅2 tablespoons of tomato paste 🧅salt and spices (any of the following: cumin, coriander, paprika, cayenne pepper)

Sauté onions in frying olive oil for 3-4 min, then add ground beef and brown well from all sides.  Then add 1 cup frozen corn and mix with a wooden spoon.  In about 2 min add peeled and diced tomatoes, 1 can of rinsed beans, 2 tablespoons of tomato paste, your favorite spices and salt.  Mix well, cover with lid and cook on medium heat for 20-25 min, until beef is ready.  It goes well with rice, potatoes or on it’s own too.
